Spring Vegetable Fried Rice

Spring Vegetable Fried Rice

Ingredients

  • 4 cups cooked and cooled rice* (see notes)
  • 2 ½ cups diced spring vegetables (carrots, spring onion, asparagus, peas, broccolini, etc.)
  • 2 cups chopped spring greens (bok choy, kale, spinach, chard, etc.)
  • 3 cloves minced garlic
  • 2 tsp neutral vegetable oil
  • 4 Tbsp low-sodium soy sauce or tamari
  • 2 Tbsp rice wine vinegar
  • 1 Tbsp sesame oil
  • 4 eggs, or 1 per person (optional)
  • Green onions for serving

Instructions

    This recipe comes together quickly so make sure all your vegetables and greens are prepped before starting to cook.

  1. In a small bowl, combine the tamari or soy sauce, rice wine vinegar, and sesame oil and set aside.
  2. In a large skillet, heat 2 tsp of neutral oil over medium high heat. Wait until the pan is hot and add your hearty vegetables (onions & carrots). Give them a quick toss and let them cook for about 4 minutes, stirring occasionally until they start to caramelize.
  3. Stir in the remaining diced vegetables (asparagus, peas, broccolini, etc.) and cook for 3 more minutes or until tender. Stir in the minced garlic and chopped greens and cook until greens start to reduce in size. 
  4. Add the cooked rice and your tamari sauce mixture to the skillet and mix until the sauce is fully incorporated. Cook for 3-5 more minutes or until the fried rice is cooked to your liking. Turn off heat and set aside.
  5. Serve with sunny side up eggs (optional): In another skillet, heat a little bit of oil over medium heat. Once the pan is hot, crack your eggs into the skillet. Cover with a lid and let cook for 3 minutes or until your egg white is set. Remove from the pan and season with a little salt and pepper.
  6. Divide rice among bowls. Top with a fried egg and sliced green onions. Enjoy!

Notes

  • Day old rice works best here. If you start with fresh, warm rice, your fried rice will turn out mushy. If you don’t have time to prepare a day ahead, cook and cool your rice in the fridge for at least an hour to dry it out. 
  • You can use any rice you have on hand for this recipe: jasmine, long-grain, white, brown, or farro – they all work great.
