Pumpkin Bread with Crumb Topping

Pumpkin bread with homemade pumpkin puree and a sweet crumb topping.

Ingredients

  • 1 small sugar pumpkin (to make 1 ½ cups pumpkin puree)
  • 1 ¾ cups flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon + extra for sprinkling
  • ½ tsp nutmeg
  • ¼ tsp ground ginger
  • ¾ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 ½ tsp vanilla extract
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup freshly squeezed orange juice
  • 1 tsp orange zest

Crumb topping:

  • ½ cup flour
  • ½ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 Tbsp unsalted butter, melted

Instructions

    Make your own Pumpkin Puree:

  1. Cut the pumpkin in half lengthwise. Using a large metal spoon, scoop out the seeds and strings. Sprinkle a little cinnamon over the insides and place them flesh-side down on a baking sheet greased with butter. 
  2. Roast the halves at 400°F in the oven for 45-50 minutes or until easily pierced with a knife. Let the halves cool face-down on the baking sheet. Scoop out the flesh and mash with a potato masher or fork. Set aside 1 ½ cups pumpkin puree for this recipe. 

Pumpkin Bread: 

  1. Preheat the oven to 350°F. Grease a 9 x 5 loaf pan. 
  2. Prepare your crumb topping by stirring the flour, sugar, cinnamon, and butter until you get a texture resembling small pebbles. Set aside. 
  3. To prepare the batter, combine the flour, baking soda, cinnamon, nutmeg, ground ginger, and salt in a bowl.  
  4. In a separate bowl, whisk together the eggs, oil, 1 ½ cups pumpkin puree, and vanilla extract. Add granulated sugar, brown sugar, orange juice, and orange zest. Add the dry ingredients to the wet ingredients and, using a large spoon or spatula, stir until just combined. Pour the batter into the prepared loaf pan. 
  5. Spread an even layer of the crumb topping over the loaf. Bake in the center of the oven for 45 minutes to an hour, or until a knife inserted into the center comes out clean.
  6. Allow the loaf to cool completely before removing it from the pan. Slice, top with butter, and enjoy!
