Herb Whipped Goat Cheese with Marinated Tomatoes

Herb Whipped Goat Cheese with Marinated Tomatoes

This simple recipe comes together in 15 minutes to make a great party appetizer, family snack, or even loaded on toast for breakfast.

Ingredients

  • 6 oz plain goat cheese
  • ½ cup plain greek yogurt
  • 1 ½ cups fresh herbs, packed (we used basil and mint)
  • 2 Tbsp olive oil
  • 2 Tbsp maple syrup or honey
  • 1 Tbsp lemon juice
  • 1-2 Tbsp water (as needed)
  • Pinch of salt
  • Bread or crackers of choice

Marinated Tomatoes

  • 1 pint cherry tomatoes, halved
  • 1 Tbsp olive oil
  • 1 tsp lemon juice
  • 1 clove garlic, minced
  • Pinch of salt and pepper

Instructions

  1. Toss all of the tomato ingredients in a medium bowl. Set aside to let marinate while you prepare the goat cheese.
  2. In a food processor or blender, add all of the goat cheese ingredients except for the water and blend. If the mixture is too thick, slowly add water – a tablespoon at a time – and blend until desired consistency is achieved.
  3. Transfer the herb whipped goat cheese to a bowl and top with the marinated tomatoes. Serve with toasted bread or crackers and enjoy!
