Root vegetables like carrots and beets, potatoes, onions, and apples are a few types of produce that are known as storage crops. As this title implies, they are well known for their ability to be kept for long periods of time. This means they’re often available throughout the winter, with other local produce is no longer available. Ingredients
For Tian
- 2 small sweet potatoes
- 2-3 small beets
- 3 medium carrots
- 3 parsnips
- 2-3 daikon radishes
- 2-4 small potatoes of choice
- 2 apples (optional)
- 2 small red onions or shallots (optional)
- Parmesan
- Red pepper flakes (optional)
For Sauce
- 1 Tbsp salted butter
- 3 cloves of garlic, minced
- 1 cup chicken broth
- 2 Tbsp of dijon mustard
- 1 cup heavy cream
- ½ tsp salt
- ¼ tsp pepper
- 4 sprigs fresh thyme
Instructions
- Prepare vegetables: Wash all vegetables. Slice into ⅛ -¼ inch slices using a sharp knife or mandolin. Do your best to keep all slices the same diameter and thickness. Peel if desired. Core apples, if using.
- Prepare Sauce: Preheat the oven to 400°F. In a medium skillet, melt butter over medium heat. Stir in garlic for 1 minute until fragrant. Stir in chicken broth and Dijon mustard, then whisk in heavy cream, salt and pepper, and thyme. Remove sauce from heat and set aside.
- Prepare Tian: Starting at the outer edge of the dish, arrange the vegetables in groupings of 2 or 3 slices of each vegetable, layering and overlapping slightly, circling around the skillet. Continue making circles inward until the skillet is filled. Alternatively, make straight rows of vegetables. Tuck remaining slices in the center as needed to fill up extra space. Pour sauce over the vegetables and top with a sprinkle of thyme.
- Bake: Cover with aluminum foil and roast for 35 minutes on the center rack. Uncover the skillet, then continue baking for an additional 25-30 minutes. Top with a sprinkle of salt and parmesan, if desired.
