Taco salad is an easy, customizable, meal for those busy weeknights. This Bison Taco Salad, designed by FAST Blackfeet and featured in the 2024 Local Food Guide, keeps both flavor and nutrition in mind.

FAST Blackfeet Bison Taco Salad

- 1 lb ground bison
- 2 Tbsp taco seasoning
- 1 can of low-sodium black beans, drained and rinsed
- 1 can of corn, drained
- 1/2 bag of blue corn tortilla chips
- 1 package of spring mix salad
Toppings (Optional)
- Pico de gallo
- Guacamole
- Grape tomatoes, quartered
- White onion, diced
- Shredded cheese
- Fresh cilantro, chopped
Instructions
- Cook bison thoroughly in a skillet over medium-high heat. Then, add the drained and rinsed beans and corn. Season with taco seasoning.
- In a bowl, add spring mix and slightly crushed blue corn tortilla chips. Combine bison mixture with the salad and tortilla chips. Top with toppings of choice and enjoy!
