Ingredients
Ramen
- 3 Tbsp neutral oil
- 1/2 cup of chopped shallots
- 4 garlic cloves, minced
- 1 Tbsp of freshly grated ginger
- 1 cup mushrooms of choice
- 2 Tbsp soy sauce, or substitute
- 2 Tbsp rice vinegar
- 3 Tbsp white miso paste
- 1 Tbsp hot chili oil (optional)
- 1/2 tsp of salt
- 1 cube chicken stock
- 4 cups water1 cup coconut milk
- 2 packs of ramen (no seasoning)
Garnish
- Green onions, thinly sliced
- Carrots, thinly sliced
- Baby bok choy, sautéed
- Kale, sautéed
- Crispy mushrooms
- Sesame seeds
- Chili flakes or oil
- Hard or soft-boiled eggs, halved
- Bacon
Instructions
- Prepare Toppings: Wash and prepare all produce and cook all desired toppings to your preference.
- Cook Broth: Heat large pot and oil over medium heat. Sautee mushrooms for about 5 minutes, then add in shallots, garlic, and ginger, and cook 2-3 more minutes. Add in soy sauce, miso, and vinegar, stir to combine, and then salt, chili oil (if using), coconut milk, water, and stock cube. Reduce heat to medium-low and simmer for 20 minutes.
- Assemble Ramen: Add ramen noodles to broth, omitting any seasoning packet, and cook for time indicated on the package (usually 3-4 minutes), making sure to discard any seasoning packet included. Dish ramen into bowls, garnish with toppings of choice, and enjoy!
