Garlic Confit
This kitchen staple is easy to make, flavorful, and will turn any meal up a notch (or five notches).

Ingredients
- 4-5 heads of garlic, cloves peeled (about 1 1/2 cups)
- 1 ¼ cups extra virgin olive oil
- A few sprigs of fresh rosemary and thyme (optional)
- Pinch red pepper flakes
Instructions
- Preheat the oven to 250° F.
- Add the peeled garlic cloves to a small baking dish. Add the olive oil, adding more as needed to fully cover the cloves. Add in fresh herbs and red pepper flakes.
- Bake in the oven for an hour or until the garlic cloves are golden and soft.
- Allow the garlic to cool. Using a slotted spoon, transfer the garlic and then the oil to an airtight jar. Store in the refrigerator for 2-3 weeks. It’s normal for the garlic confit to solidify in the fridge. It will become liquid again when returned to room temperature.
- Enjoy with everything – pasta, soup, sandwiches, salad dressings, eggs, potatoes! The possibilities are endless.
