Ingredients
Basil Simple Syrup
- 20 fresh basil leaves
- ½ cup sugar
- ½ cup water
Jam Mocktail
- 2 Tbsp room-temperature huckleberry jam (blueberry if huckleberry jam isn’t available)
- Juice of ½ a lemon
- 1 Tbsp basil simple syrup
- 2 cups tonic water or sparkling lemonade
- Ice
- 2 sprigs of basil
- Optional: blueberries and lemon for garnish
Instructions
- Make Simple Syrup: In a small saucepan, add water and sugar, and heat until the sugar is dissolved, but the water is not boiling. Remove from heat and add basil leaves. Let “steep” for 15 minutes, then strain and discard the leaves. Let cool before using.
- Mix Mocktail: In a cocktail shaker or tall glass, combine jam, lemon juice, and basil simple syrup. Shake or stir well, until smooth. (Optional: muddle fresh basil leaves with jam mixture and strain before splitting between glasses.) Split the mixture between two glasses. Fill the glass with ice as desired. Top off the glass with tonic water or lemonade. Garnish with basil springs, lemons, or blueberries, and enjoy!
