This recipe for Spaghetti Squash Relish was submitted by Jessica Seifert of Cut Bank, MT. Use it on burgers or brats, as an appetizer on crackers, or as a stand-alone side!

Spaghetti Squash Relish

Ingredients
- 1 spaghetti squash
- 1 onion
- 1/2 cup sugar
- 1 cup celery, diced
- 1/2 cup red pepper, diced
- ½ cup green pepper, diced
- 1/2 cup vegetable oil
- 1/4 cup vinegar
Instructions
- Cook Squash: Pierce squash on each side and microwave for 3 minutes to soften. Cut squash lengthwise in half, scoop out seeds, and place cut side down on parchment paper on a baking sheet. Bake at 350°F for 30-40 minutes, or until soft. Let cool.
- Combine: Dice celery, onion, red pepper, and green pepper. Combine sugar, vegetable oil, vinegar, and salt in a bowl. Add diced vegetables to the oil and vinegar mixture. Add cooled spaghetti squash to the vegetables. Chill relish for two or more hours to serve cold. Serve over hamburgers, brats, hot dogs, BBQ chicken, or any grilled meat. Enjoy!
