Fork & Spoon, located in Bozeman, is Montana’s only pay-what-you-can restaurant, started by Human Resource Development Council of District IX to share a hot meal with people that didn’t have means to prepare a food box from the Food Bank and to lend a sense of dignity and community into the sharing of a meal.
Fork & Spoon partners with the Gallatin Valley Food Bank to rescue food that would otherwise be wasted, and accepts game meats from Hunters Against Hunger to access sustainably sourced protein. They even manage to compost food scraps with YES! Compost.
When asked why they value local, Fork & Spoon Chef Leah Smutko said, “There’s care and intention from the first seed planted to handing someone a finished plate. I value local because I love seeing humans connect their skills with each other, knowing that our environment is healing from it.”
“We value our kitchen as a way of teaching those with barriers to entry for the workforce. We hire through pre-release and youth programs to educate interested individuals on how to work in restaurants and gain useful references.”
